Iowa Corn and Ham Bake

Ingredients

For 4 servings you will need:

4 eggs
1 1/2 cups milk
1 1/2 cups shredded cheddar cheese
1/4 tsp. salt, optional
1/4 tsp. pepper
1/4 tsp. dried thyme leaves
1/2 tsp. powdered mustard
2 green onions, minced
2 cups corn, frozen, thawed or canned, drained
1 1/2 cups coarsely chopped ham
1 green or red pepper, finely chopped
1 Tbsp. butter or margarine

Directions

In a mixing bowl, beat the eggs.

Mix in the milk, cheese, salt, if used, pepper, thyme, mustard, green onions, corn and ham.

Saute' the green pepper in the butter until slightly softened. Stir into the mixture.

Butter a 7-by-11-inch shallow baking dish. Pour the mixture into dish.

Bake at 350 degrees F for 40 to 45 minutes until set. To test, insert a knife into the center. The knife should come out clean.
