Cake:
2 cups of sugar
1 & 1/2 cups of vegetable oil
2 cups of self-rising flour
1 tsp vanilla extract
1/2 tsp of ground cinnamon
4 eggs
3 large carrots, peeled & grated
1 cup of chopped black walnuts
Buttermilk glaze:
1 cup of sugar
1/2 cup of buttermilk
1/2 tsp of baking soda
1 tbsp of corn syrup
For the cake, combine the sugar. oil, flour, vanilla, and cinnamonin a large bowl and mix well by hand. Add the eggs and beat well. Stir in the carrots and walnuts. Pour into a lightly greased tube pan. Bake at 350 degrees for 1 & 1/4 hours. Remove the cake from the oven.
For the glaze, combine the sugar, buttermilk,baking soda,and corn syrup in a sauce pan. Bring to a boil over medium heat.
To assemble, pour the hot glaze over the top of the carrot cake in the pan.
Cool completely in the pan on a wire rack. Remove the cake from the pan. Serves 15
